Food Technology InternProject Title: Spectral and Color-Based Image Processing Techniques for Carotenoid ProfilingProject Overview:This project focuses on developing spectral and color-based image processing methods to detect, quantify, and profile carotenoids in fruits, vegetables, and other plant-based samples. Carotenoids are natural pigments responsible for yellow, orange, and red colors, and they play important roles as antioxidants and precursors to vitamin A. Accurate profiling of these pigments is essential for assessing food quality, monitoring agricultural produce, and evaluating nutritional content. The project will use non-destructive optical imaging techniques to capture color and spectral features, which will then be analyzed to determine carotenoid concentrations. By correlating image-based data with pigment content, the study aims to provide a fast, efficient, and cost-effective alternative to traditional chemical analysis methods.Expected Outcome:• Development of an image-based system for carotenoid detection and quantification.• Validation of spectral and color analysis techniques against known standards.• Report detailing methodology, results, and accuracy of profiling.• Presentation highlighting findings and potential applications in food quality and agriculture.
